Everything comes from a degree in oenology. It is, maybe, a quiet foreseeable line of research in a region very rich in wines as Tuscany is. But daily routine and a good idea sometimes offer unexpected opportunities. One day, Fabio Guidarini tried to ferment grape juice and strawberry grapes juice with a bit of honey. The experiment was a success and Fabio changed his life, so since 2003 he has dedicated himself to the creation of fruit-fermented products. It means the production of 15 alcoholic content wines based on grape juice, fruit and honey fermentation. The denomination “fermented drink” is used because laws forbid the donomination of “wine” for every fermented product which is not totally made with Vitis vinifera grape vines.

We can find End, based on Aleatico red grape and honey; Cupi Dolce based on Muscat grapes and honey; and Cupi Santo, based on one year refined barrique Muscat grapes and Acacia honey. Among the new and unusual products there are Fra’golino, obtained by the fermentation of strawberry grape juice; Ciliè, based on sour cherries, apples and cane sugar; and Castagne based on chestnuts, apples and chestnut honey.
